Chicken Niblets in Chicken Sausage Sauce

This sauce is to die for!!!!! You’ll love the exotic flavours, it’s so juicy and yummy. My friends loved it so much that they’ve asked me to make it for them repeatedly!!! Hahaha!!!


Smoked Chicken Sausage
Basmati Rice
Fresh Coriander
4 Fresh Tomatoes
2 Spring Onions
2 Onions
Knorr Cubes
Black Pepper
1 Tablespoon of Mustard
2 Tablespoons of Ginger and Garlic Paste
Cayenne Pepper
3 Scotch Bonnets
Sweet Peppers


I always start by cooking the rice first and I like to add a bit of butter because it gives it a very nice flavour. While the rice is cooking, wash the kitchen throughly with lime or lemon. I do this because it takes off all the bacteria and the smell (I do this with all types of meat by the way). Heat up your Wok then add drizzle of olive oil, chopped onions and spring onions. Stir until browned and add the niblets, salt, knorr cubes, black pepper, ginger and garlic, scotch bonnets paste, mustard and thyme, stir well and cover. Let it simmer for about 20 mins on low-medium heat. Add in the chopped fresh tomatoes, sausages and some water as the sauce will thicken, then let it simmer for another 10 mins then lastly add the freshly chopped coriander and sweet peppers and leave it for 5mins and it’s done (Do not let the chicken or the sauce dry out so try not to leave it on the heat for too long, you want it to be nice and moist). Serve with white rice. Enjoy!!!! 🙂
