Hearty Omelette

I am not usually one for breakfast but this is a must have!!! it is so delicious. Now, I know that people always associate healthy with boring and tasteless but it really doesn’t have to be. Here is a very tasty yet healthy way to start your day!

Ingredients

Chopped White and Purple Cabbage
1/2 Small Red Onion
1/3 Cup of Oats
2 Eggs, beaten
4 Cherry Tomatoes, sliced
1/3 Cup Almond Milk
Pinch of Salt and Black Pepper
1 Scotch Bonnet if you want chilli
1 Tablespoon of Grape Seed oil
Coriander

Method

Heat the oil in a frying pan over medium heat, then place onion, cabbage, tomato and chilli and cook until slightly browned. While the vegetables are cooking, place the eggs and almond milk in a small bowl and whisk together, then add in the salt and black pepper as well as the rolled oats to the egg mixture and combine. Finally pour in the mixture over the vegetables in the pan and cover with a lid. Cook this for about 5 mins until set then transfer to a plate. Garnish with chopped coriander and a few sliced cherry tomatoes….Enjoy!!!! 🙂
