Vanilla Pancakes

This for me is a very fun way to start your day! I love pancakes and yes sometimes you just have to indulge!!!!! I love making pancakes when I have family or friends around, especially when they have their kids with them and obviously the kids absolutely love it!!

Ingredients

3 Cups Milk
2 Eggs
2 Teaspoons Vanilla Extract
4 Cups Self-Raising Flour
1/3 cup caster sugar
Fresh Strawberries

Method

Place the milk, egg and vanilla together in a bowl and whisk together. Add the flour into mixture the and stir in the sugar. Whisk the mixture well until combined. Add the vanilla extract to the mixture and stir.

Heat a large non-stick frying pan over medium heat. Brush pan with butter or sunflower oil. Use 1/4 cup mixture per pancake and cook each pancake for about 3 to 4 minutes or until bubbles appear on surface. Then turn and cook for 3 minutes or until cooked through. Transfer pancake unto a plate and cover with foil loosely to keep warm (make sure it’s not tightly covered because it’ll get all wet and soggy). Repeat with remaining mixture, brushing the pan with butter or sunflower oil before doing another batch. Lastly, decorate with strawberries and sift icing sugar over the top, then drizzle nutella chocolate spread over the top using a No.4 nozzle tip…. Enjoy!!! 🙂
