Chicken & Mushroom Casserole

This meal reminds me of family and friends, for me it’s a nice dish to have on a weekend with loved ones. My dad taught me how to make a casserole and I’m sure you will love this recipe…..:)

Ingredients

6 Tablespoons Plain Flour
Salt
Black Pepper
Knoor Cubes
Mushroom
Salami (Beef, Turkey or Chicken)
Dried Mixed Herbs
Dried Thyme
Paprika
Boneless Chicken Thighs (Diced)
Olive Oil
2 Onions, Sliced
Carrots
Mushrooms, Sliced
Courgette, Diced
Aubergine, Diced
3 large Potatoes, Peeled & Sliced
1 Tablespoon Mustard
1 Tablespoon Minced Garlic and Ginger
Knorr Cubes, Spring Onions and Fresh Coriander

Method

Mix together the plain flour, black pepper, salt mixed herbs, thyme, knorr cubes and paprika to taste. Coat the meat in the flour mix and add the sliced onions in a little oil over medium heat till soft and browned. Increase the heat to medium high and add the mustard scotch bonnets and minced garlic and ginger. Then add some water, spring onions and fresh coriander, allow to boil up, then leave to simmer for about 15 minutes. Add carrots, salami, mushrooms, courgette and aubergine and leave to simmer.

Take the pan off the heat and transfer contents to a casserole dish and cooked slices of potatoes (half boiled) in the casserole, Sprinkle a little black pepper over the top.Bake in a preheated oven at 150 C / Gas 2 for about 45mins. Enjoy!!!! 🙂
