I love wraps because they are easy to make, also not too heavy especially if you want to have something light whether it may be for lunch or dinner. I used normal tortillas however, you can also use wholegrain tortillas. It’s entirely up to you. Here’s the recipe…………:)
Boneless Chicken Thigh
Lemon Zest (1 Lemon)
1 Tablespoon Minced Ginger & Garlic
1 Tablespoon Mustard
2 Fresh Tomatoes
Scotch Bonnet (Only if you like it hot)
Once your meat is washed, heat up a Wok if you have one, if you don’t you can just use a normal pan. Once heated, add in olive oil, then onions and stir until browned. Add the chicken and stir then add salt, knorr cubes, black pepper, mustard, thyme, basil, garlic and ginger. Keep stirring for about 5mins then add the fresh tomato, chill flakes, courgettes, scotch bonnets (chilies), squeeze half a lemon and add the juice and grate the zest into it. Mix well and let it cook and simmer on low to medium heat for about 20 mins. (I prefer using boneless chicken thigh rather than chicken breast because you’ll find it’s a lot more moist, it doesn’t dry up like chicken breast). Once this is cooked, heat up your oven for a few mins and warm up the tortillas. Finally add the chicken onto the tortillas, add some lettuce & drizzle a bit of mayonnaise then wrap, put them back in the oven for about 5mins and Voila!! Good to go!!! Bon Appétit!!!!!
