Jumping Moon Chicken (Chicken In Creamy White Sauce)

This dish was inspired by Afrolems, a food blog I follow on Instagram. Though I’ve cooked mine a little bit different, I also renamed it ‘Jumping Moon Chicken’. Don’t ask! lol! My cousin told me to name the dish and I had no idea what to name it. He said he wanted the dish to have a name that would stand out on a menu and one that would get people’s attention. Then he came up with it, “Jumping Moon Chicken” hahaha. Thought it was brilliant, really funny and catchy so I thought why not??!! Do enjoy!! 🙂

Ingredients

2 Pieces Chicken Breast
Salt (To your Taste)
Chicken Stock
Knorr Cubes (To Your Taste)
1 Scotch Bonnet (Optional)
1 Onion
1/2 Teaspoon Parsley
280ml Single Cream
2 Tablespoons Olive oil
2 tablespoons Butter
1 Cup Water
2 Tablespoons All Purpose Flour
Mixed Vegetables (Bell Peppers, Chopped Carrots, Mushrooms Peas & Green Beans)
1/2 Teaspoon Black Pepper
1 Tablespoon Minced Garlic
1 Tablespoon Minced Ginger
1/2 Lemon (Lemon Juice)

Method

Firstly pre-heat the oven at about 200 degrees, marinate the chicken with salt, 2 knorr cubes, black pepper, lemon juice, butter, garlic and ginger. Mix together until very well combined and place in the oven. Check the chicken after about 15mins, you should have stock from the chicken. Pour into a bowl and set aside. Grill for about 30mins and set aside. Heat up a Wok or a Pan if you don’t have a Wok. Add olive oil and a little bit of butter, then add the onions. Once the onions have started to brown, add in your vegetables and stir. Add a bit of salt, knorr cubes, black pepper, scotch bonnet chilli and parsley. Stir until well combined, then add the cream, chicken stock and a small cup of water. Let it simmer for about 10mins. To thicken the sauce a bit, you can mix 2 tablespoons all purpose flour in a bowl with a little bit of water and whisk together then add it to the sauce. This should thicken it. Don’t leave it on the heat for long because then it becomes too thick. Once you’ve done that, you can set it aside, serve with boiled rice or baked potatoes!!!! Bon Appétit!! 🙂
