Nigerian Fried Rice Wrapped In Cucumber Slices

So this is how I like my fried rice. I really don’t like the way most people make it because I find it tends to be quite dry. Well here’s my recipe so hope you enjoy!


3 Cups Easy Cook Long Grain Rice (or more depending on how many people you’re coping for)
Salt (to your taste)
knorr Cubes (to your taste)
1/2 Tablespoon Black Pepper
1/2 Tablespoon Thyme
2 Tablespoons Minced Ginger & Garlic
2 Spring Onions
500g Prawns
2 Tablespoons Butter
2 Tablespoons Olive Oil
2 Onions
2 Scotch Bonnets (Chilli’s to your taste or none if you don’t like it spicy)
1 Tablespoon Curry Powder
Mixed Vegetables (Carrots, Peas, Sweetcorn e.t.c)


Firstly, wash the rice thoroughly because you want to l get rid of all the starch. Then bring the rice to boil the rice for about 10mins and drain (if you’re using 3 cups of rice you need 6 cups of water). Set the rice aside. In a fresh pan, heat it up then add the butter & olive oil then add the onions. Once the onions are nice and soft, you can add the prawns (usually I use chicken breast or boneless thigh as well but this time I only used prawns). Keep stirring until slightly browned. Now you want to add the mixed vegetables, salt, knorr cubes thyme, black pepper, ginger, garlic, scotch bonnet chilli’s and curry powder. Stir well until very well combined. Let it simmer for a few minutes then add the rice a little at a time and mix it in properly with a wooden spatula until it’s very well coated. Now all you have to do is add a little bit of water (about half a cup to start with, remember the rice has been cooked half way already). Put it on low heat and keep checking it to see if the rice is soft, if not just keep adding little bits of water until it’s all cooked. You don’t want to add plenty of water because the rice will over cook and you’ll be left with soggy rice lol! Now we don’t want that do we??!! 🙂 So that’s that! Bon Appétit!!!! 🙂
