Lamb Kofta Kebabs Served With Tomato Salsa


This is a very simple and easy recipe especially for those of you who are fasting during Ramadan. It’s a great starter and can be served with any dip of your choice.

900g Lamb Mince
1/2 Handful Fresh Coriander
1/2 Handful Mint Leaves
2 Tablespoons Ground Coriander
2 Tablespoons Ground Cumin
2 Tablespoons Ground Smoked
1 Tablespoon Minced Ginger
1 Tablespoon Minced Garlic
2 Knorr Cubes
Salt (to your taste)
1/2 Tablespoon Black Pepper
1 Teaspoon Cayenne Pepper
1 Chilli (scotch bonnet, optional)
4 Tablespoons Olive Oil


Place the mince in a bowl and add a bit of salt and black pepper. Add all the ingredients into a food processor and blitz for about 30 seconds. Add the mixture into the mince and mix until well combined. You can put this in the fridge for a couple of hours of you’re not cooking it straight away. If you are, shape the mince into sausages and place in the oven and grill for about 10 mins. Check it and once browned, turn over to the other side and grill for another 10mins. Bon Appétit!!!! 🙂

P.S. You can eat with anything like Biryani or even on it’s own with a yoghurt mint dip (natural yoghurt, a few mint leaves, squeeze half a lemon, salt and black pepper to taste) or tomato salsa (1/2handful fresh coriander, chilli powder 1onion, 3 tomatoes and lemon juice from 1 lemon, mix all together then add salt and black pepper to taste). If you don’t want to make them into kebabs you can make mini meatballs and burgers too!
