Egg Muffins With Chicken Sausages, Spinach & Parmesan Cheese

This is a very quick snack which I love. Like most of my other recipes it’s very easy and delicious recipe, perfect for Iftar for those of you who are muslims.


5 Egg whites
2 Whole Eggs
2 Lean Chicken Sausages
1/4 Cup Milk
Salt & Black pepper (to your taste)
1 Chilli
1/4 Cup Chopped Spinach
1/4 Cup Parmesan Cheese


Pre-heat the oven to about 350 F. In a small skillet add the chicken sausages until browned. No need to add oil because it will produce oil. Once the sausage is browned and cooked, set aside. Place your egg whites and eggs in a large mixing bowl, add milk, salt and black pepper, then whisk. Then add the chilli, spinach and sausages. Whisk again and set aside. Finally grease 6 muffin tin cups with a bit of butter and pour in the mixture into each one. Bake for about 20 minutes and voilà egg muffins done! Bon Appétit!!!! 🙂
