This is a great recipe for lemon cake! It’s nice, easy and won’t take much of your time. Great recipe for Iftar (for those of you that are Muslims). You can break your fast with a lovely slice of delicious homemade cake and a cup of tea!
170g Self-Raising Flour
170g Caster Sugar
170g Softened Butter or Margarine (unsalted)
Lemon Zest (3 Lemons)
1 Teaspoon Baking Powder
Pre-heat the oven to about 180degrees and grease 2 8inch sandwich tins. Mix the flour, caster sugar, eggs, baking powder and lemon zest and whisk until the mixture is smooth. Bake for 30-35 minutes. Use a toothpick to check it’s done (it’ll come out dry) or press it with your hands lightly and the sponge will spring back up. Place unto a cooling rack and once cooled spread some lemon curd (if you like) on one sponge and sandwich together Bon Appétit!!!! 😊
