Super Easy Thai Green Curry Coconut Shrimp With Basil

I love this Thai Green Curry because of the bursting flavours. It’s very delicious, yet so simple! Here’s how I like to make mine! 😊


1 Tablespoon Olive Oil
4 Spring Onions
2/3 Tablespoons Thai Green Curry Paste
2 Cloves Garlic (finely chopped)
1 Bag King Prawns (Peeled)
6ozs Coconut Milk
2 Tablespoons Fish Sauce
2 Tablespoons French Basil (chopped)
Salt (to taste)
Fresh Basil Leave (finely chopped)
1 Scotch Bonnet Chilli (optional)
1/2 Teaspoon Black Pepper


Heat up a large wok or skillet, add the oil and heat up on medium flame, add spring onions and when softened & green curry paste. Sauté for a minute. Then add prawns, chilli, salt & garlic and cook for about 2-3 minutes. Lastly, add the coconut milk, fish sauce & stir to mix well. Let it simmer for another 2-3 minutes until shrimp is cooked properly. Take off heat. Chop a little bit of the greens from the spring onions & fresh basil, sprinkle over the top! Serve with Basmati Rice! Bon Appétit!!!! 😊

P.S. If you can’t get a hold of Thai Green Curry Paste you can make it yourself. Here’s how to:


2 Onions (chopped)
4-6 Green Chillies (de-seeded & chopped)
2 Garlic Cloves (crushed)
1 Tbsp Coriander Seeds
3 Tbsp Olive Oil
1 Tsp Black Peppercorns
2 Tsp Thai Fish Sauce or Light Soy Sauce
1 Tsp Ground Cumin
2 Lemon Grass Stalks (you can use 2tbsp dried if you can’t get hold of fresh)
Small Bunch Fresh Coriander
1 Lime, grated zest & juice
8 Kaffir (lime leaves, if unavailable use grated zest of 1 lime)
1 Thumb Sized Piece Ginger


Add all the ingredients into a food processor and blitz! This will form into the paste!
