So obviously I love my Japanese food as I have stated in a previous post! This is another delicious flavour to die for!! If you like spicy food you’ll love it even more & if you don’t, you can always make it mild. 😊

Ingredients

1 Tin Coconut Milk
2-4 Tablespoons Thai Red Curry Paste
1 Bunch Fresh Coriander
Chicken Breast (cut into strips)
400g King Prawns (1 Bag)
1 Onion (finely chopped)
2 Red Chillies (finely chopped. I used scotch bonnet but optional)
1/2 Lime (juice only)
2 Knorr Cubes
1 Tablespoon Olive Oil
Salt (to your taste)
1/2 Teaspoon Black Pepper
2 Tablespoon Fish Sauce

Method

Sauté the onions for about 3 minutes until softened, add the chicken, prawns, knorr cubes, chilli & black pepper then stir for about 5 minutes.
Add the curry paste and stir until you start to smell the aroma then after about 5 minutes add the coconut milk and fish sauce. Put on low heat for about 5 minutes, add coriander & squeeze the lime juice into the sauce. Cook for another 5 minutes voilà! Good to go!!! Serve with boiled rice! Bon Appétit!!!! 😊
