Garlic Shrimp In Spicy Coconut Milk & Tomato Sauce Topped With Fresh Coriander & Spring Onions

Lord knows I love Asian flavours but Japanese food puts the icing on the cake for me. The spiciness of the food, the different flavours & textures! Oooo la la! This recipe is just divine!!!!


4 Spring Onions
1 Stock Cube
1 Bunch Fresh Coriander
1/2 Lime
2 Packets Jumbo Shrimp
1 Red Bell Pepper
1 Tin Coconut Milk
2 Fresh Tomatoes (finely chopped)
2 Scotch Bonnets (optional)
1 Onion (finely chopped)
Salt (to your taste)
1/2 Chilli Flakes
1 Tablespoon Olive Oil
1/2 Teaspoon Black Pepper


Start by heating up a wok or saucepan, once heated, add olive oil & onions. Once onions have softened add prawns & stir. Add salt, stock cube, black pepper & chilli and keep stirring for 5 minutes. Then add the tomatoes, spring onions, bell pepper, fresh coriander and let it simmer for another 5 minutes. Finally add the coconut milk & squeeze the juice of the lime over it. Serve with Basmati rice! Bon Appétit!!!!
