Thai Coconut and Pineapple Sweet Chilli Prawns

The one thing I love about seafood is that you can do so much with it without having to add too many flavours. This can be served as an appetiser or something for brunch. It’s simple, yet so delicious and burtsting with flavours….



2Tbs Coconut Cream

2Tbs Sweet Chilli Sauce

1 Tablespoon Sriracha Sauce (or any hot chilli sauce)


Mix everything in a bowl and place the shrimp unto the skewers with the pineapple and grill on the griddle pan for about 2-3 minutes on each side. Use an oven if you don’t have a griddle pan (160-180 degrees C for 10 mins). Remember to soak your skewers for about 30 minutes before using to stop them from burning.
